The Chocolate Conservatory
The Responsibility of Taste
October 28-29, 2019   –   Paris, France

This event is co-organized by Harvard University and European Business School. It brings together researchers and professionals working in the cacao-chocolate industry. This year, speakers will shed light on the responsibility of taste.

Anissa Pomiès is invited to present her work on the emergence of the specialty coffee market in France. She will introduce professionals’ actions to promote coffee excellence while showing consumers’ reaction to taste transformation. After her talk, a discussion with other panelists will be organized to highlight commonalities between the cacao and the coffee markets.
